Week two of Ange planning her meals in an attempt to lower her grocery budget is a go!
I went to the farmer’s market this week and found some apples that don’t bother my teeth (I’m weird and some apple peel bugs me so much I can’t even eat them – and I love me some apples) along with sweet potatoes and some veggies.

I opened up a can of pumpkin to make pumpkin pancakes (using the same recipe as my banana pancakes) so I plan on using the leftover pumpkin to make overnight oats for breakfast this week.
I’m flying to Kelowna on Friday for my marathon (6 days! GULP!) and have no idea what my food will look like when I’m there. I do know I’ll be cutting out virtually all fibre starting on Friday (maybe even Thursday) because, well, I’ll let you figure that one out.
My meals this week are very plant focused and I’ll definitely be adding in snacks as needed if I find I’m hungry. My goal is to eat extra healthy this week, but also make sure I’m giving my body enough fuel to keep my energy levels up for Sunday.
